According to CNN, 224 million roses are grown just for Valentine’s Day and Americans spent $1.9 billion sending them. That’s a lot of green for a lot of red.
Roses are meant to symbolize love, and love looks and smells wonderful at first. But no matter how many times you change the water, roses eventually wilt, then they die—and love doesn’t look nearly as promising at the bottom of a trash can. A bouquet of roses is the ultimate romantic and luxurious flower gift, but it is always sad to see those beauties drooping.

Rose Petal Jelly
Amy Lynn Tucker of Falls City, Oregon, uses Cecil Brunner and Mr. Lincoln roses for her gorgeous rose petal jellies. “If you ever wondered what it might be like for a hummingbird to taste a rose, this is the jelly for you,” she says. “They go great with scones and can be used as a base for a lamb roast marinade.” Her eight-ounce jars are water bath canned and have a one-year shelf life, but surely they wouldn’t last that long in your house.
- 10 roses, white portions removed from petals
- 3 cups of water
- 3 cups of cane sugar
- 1 box (1.75oz) powdered pectin
- 2 tablespoons lemon juice
Bring water to boil in a medium saucepan and remove from heat. Add rose petals to water. Cover saucepan and allow mixture to steep for 2 hours. Pour mixture through strainer into a bowl and discard rose petals. Measure out 3 cups of rose tea. Place it into a heavy pot and add pectin. Stir until pectin is dissolved and bring to a hard boil. Add sugar and bring to a hard boil again for 1 ½ to 2 minutes. Remove from heat and skim foam from jelly. Ladle jelly into prepared jars.
Candied Rose Petals
At Urban Farmer restaurant in Portland, Oregon, a cocktail called the Kitty Cat comes garnished with candied rose petals. Just a little egg white and sugar transforms rose petals into cocktail candy. They are super simple to make and also look great on top of cupcakes or cakes.
- Fresh rose petals
- 4 egg whites
- 2 cups sugar
Dip each petal into the egg whites, then dip into a bowl of sugar. Lay petals on a tray to dry.
