When should I harvest my popcorn? First year growing it, and not sure how long to leave on stalk.

Once the kernels have dried completely - a week or two after the shucks have started to dry - you can remove the cobs and either store "as is" or shuck the kernels and store indoors where it is cool and dry. you may want to put them in the freezer for a couple of hours to kill any possible insect larvae that are hitch-hiking on them (it happens).

The key to "poppable" corn is the right amount of moisture in the kernel. A few weeks after harvesting your corn and letting it cure in a warm dry location, give a sample of kernels the pop test. If the kernels crack but don't fully pop or are chewy, let the kernels dry some more before storing in an air tight container in a cool spot.
